2 1/4 lb. leeks
4 Tbsp. butter
salt and pepper to taste
2-3 Tbsp. sour cream

Directions:
Directions:
Trim the leeks. Slit them lengthwise, and wash thoroughly in cold water. Drain well, dry with paper towels, and chop. Melt the butter in a large skillet, then stir in the leeks. Cover and cook over low heat until soft, about 20 minutes. Stir the leeks occasionally. Season with salt and pepper. Remove from heat and stir in sour cream. Serve hot!

These go well with my crepe recipe in this cookbook. To make it a main dish, you can add cooked chicken or tuna before adding the sour cream.
