2 C cooked Black-eyed peas, drained
3 C cooked and cooled long-grain rice
½ C chopped red onion
¼ C chopped celery
1 jalapeno pepper, seeded and minced
¼ C loosely packed fresh parsley ( I used cilantro)
¼ C loosely packed fresh mint ( I didn’t use this)
1 garlic clove
1 t salt
3 T fresh lemon juice
¼ C olive oil
¼ t freshly ground black pepper

Directions:
Directions:
Combine peas, rice, onion, celery and jalapeno in a large bowl.
Place cilantro,(mint), and garlic on a cutting board, sprinkle evenly with salt and finely chop. (I put mine in the chopper)
Sprinkle over rice mixture and stir gently.
Combine lemon juice, oil and pepper in a small bowl. Pour over rice mixture and stir to coat.
