1 5 lb. chicken
1 onion
2 quarts water
1 carrot
2 tsp. salt

Dressing:
1 1/2 loaves of bread (cubed) 12 cups (Keep bread out overnight, or use dried bread cubes, non-seasoned)
6 Tblsp. chicken broth
1 medium onion
1 tsp. salt
1/4 tsp. pepper
1 cup butter (2 squares)
1 tsp. sage
2 stalks celery

Sauce:
1 cup fat from broth
4 cups broth
2 tsp. salt
1 cup flour
1 cup milk
4 eggs

Directions:
Directions:
Simmer the first 5 ingredients and then cut chicken off bones. Mix ingredients for dressing together. For sauce: Melt fat, blend flour, add milk and salt, let thicken.Cool a bit. Beat eggs and mix with sauce. Grease pan and put a layer of dressing, half of the sauce ad then a layer of chicken. Repeat layers. Top with cracker crumbs.

Bake at 375 degrees for 20 minutes.
