1 c. all purpose flour
1/4 tsp. salt
1 c. milk
2 large eggs
1 Tbsp. unsalted butter, melted

Preheat oven to 450º. Place muffin tin in oven to heat. Whisk flour and salt in a medium bowl. Whisk together milk, eggs, and butter. Pour wet ingredients into dry, whisk until blended. Remove hot pan, spray well with oil. Fill each cup half full. Bake for 20 minutes. Lower heat to 350º, bake for 15 minutes more. After you remove them from the pan, stab a hole in the top of each popover with a sharp knife to allow the steam to escape. Serve with butter and jam, or fill with tuna or chicken salad. Can be stored in a Ziploc bag for 2-3 days.

Luke and I had popovers at the Jordan Pond House in Bar Harbor, Maine, and it made me want to learn how to make them! I've tried a few recipes, but this one is the best. If you have a popover pan, you can use it, but a muffin tin works fine, preferably one that is lighter metal rather than dark.
