1 C milk
2 T. sugar
2/3 C flour
pinch of salt
1 tsp cinnamon or more to taste
1/2 tsp nutmeg
1 egg
1 tsp vanilla extract
1/2 tsp almond extract
1/4 cup Madeira or other liqueur

Pam spray and 1 Tbsp butter

Madeira for marinating.

Wash and hull strawberries, sprinkle with coarse black pepper and drizzle Madeira over. Cover to marinate while making pancakes.

Combine all batter ingredients in food processor, blender or mixer.

Heat 8" skillet, spray with non stick spray or melt butter.
Pour batter into skillet to cover bottom (approximately 1/4 cup) swirl and cook until browned on 1 side then flip to brown other side.

Place pancake on dish and drizzle with honey and roll up. Continue with rest of the batter. They can be kept warm in the oven until all pancakes are done.
Serve each pancake with a scoop of marinated strawberries.

This has been a favorite in our family for many years. It is what my husband David calls Swedish Pancakes. Most people would think they are a sweet crepe. Our boys just call them YUMMY.
We will use any fresh fruit to top the pancakes but especially like the strawberries with black pepper and the Madeira. It is an unusual combination and you will be surprised how the pepper enhances the flavor of the strawberries. This recipe can be adjusted to what fruit and liqueur you have on hand. We have been know to use Sailor Jerry's rum and also Malibu rum. A great brunch dish with an omelet or poached eggs and crispy bacon.
