2 c. flour
1/2 tsp. salt
2 tsp. sugar
1 1/3 T. baking powder
2 tsp. cream of tartar
1/2 c. shortening
2/3 c. milk
1 can tuna

White Sauce:
2 T. butter
2 T. flour
1/4 tsp. salt.
1 c. milk

Directions:
Directions:
Sift together first 5 ingredients. Cut in shortening and add milk all at once; mix until all is moistened. turn out on floured surface. Knead about 10-12 min. Pat out and cut with floured cutter. Place on ungreased pan and bake at 425º for 10-15 min. Make any white sauce (if you don't have a white sauce recipe you can use the one below). Add one can of tuna, drained and 1/2 c. shredded cheese. Cook until cheese is melted. Pour over hot biscuits. Serves 2-3

White Sauce: In a small, heavy saucepan, melt 2 T. butter over low heat. Blend 2 T. of flour into the melted butter and add 1/4 tsp. salt. Cook over low heat, stirring for 4-5 min. Cooking for this length of time will minimize "flour" fast. Slowly add 1 c. milk, stirring constantly. continue cooking slowly until smooth and thickened.

This is a recipe that came from my grade school cook, Dollie Dickey. This was a school favorite. Don't let the tuna scare you off.
