2 sticks butter, softened
2/3 cup vegetable oil
5 eggs
3 cups plain flour
1 t. baking powder
2 T coconut flavoring
1 T. vanilla
1 cup milk
2 cups grated coconut

Directions:

1. Cream butter, oil, and sugar until fluffy.
2. Add eggs one at a time, combining well.
3. Sift together flour and baking powder and add alternately with milk.
4. Add flavorings and beat at medium speed for 4-5 minutes.
5, Pour into greased and floured Bundt pan.
6. Bake at 325º for 1 1/2 hour (until toothpick stuck into center comes out clean.)
7. Let cool for about ten minutes before removing from pan.

If you wrap this tightly in plastic wrap, it will get moister over a few days, but you should refrigerate it so the coconut won't spoil. This also freezes well if you wrap it well.
