For every pound of pork (cubed shoulder or butt) use:

1 tsp salt
1/4 tsp monosodium glutamate (I omit this)
1/4 tsp granulated garlic (NOT salt or powdered)
1/4 tsp pepper'1/2 tsp oregano
Lemon Juice...LOTS of it!

Directions:
Directions:
Combine all ingredients and marinate meat in bog or large pan overnight or longer.. Skewer meat and grill over charcoal.

NOTE: the use of granulated garlic and not garlic salt or powder and plenty of lemon juice are the secrets of making a flavorful souvlaki.

*Save marinade, heat and serve with the skewed meat in hot dog buns. It makes a soggy bun but the flavor is phenomenal!
