6-7 slices bacon or chunk of salt pork
6 boiling potatoes; Maine whites are great
1 large sweet onion or more if you desire
3# haddock; you can buy fillet or spare pieces from your fish store
1 can evaporated milk
1/2 qt. milk
1 stick butter

Directions:

Brown bacon or salt pork in soup pot. Remove with slotted spoon leaving grease.

Saute onions until transparent. Add potatoes and cover with water. Boil until potatoes are almost done.

Lay fish on top of the contents in the pot. Cover and cook until fish is done and galls apart in chunks. About medium heat.

Add can of condensed milk and regular milk. If it looks too thick after stirring add additional milk or water.

Put stick of butter in, cover over low.

Herbs can be added if that is to your liking.

This is a staple in Maine. Grandma Barbara always had a pot made for Jennifer as this was her favorite meal in place of the lobster the rest of us loved.

Is better made a day or two ahead then reheated on low heat.

Does not freeze well.
