4 extra large Eggs, or 6 large Eggs
1 c. Flour
1/2 tsp. Salt
2 tbsp. Sugar or Honey, optional
1 c. Milk or Vanilla Almondmilk
3 tbsp. Sour Cream
3 tbsp. Oil

Directions:
Directions:
Put all ingredients in a blender and blend on high 20 sec. Heat skilled to a high temperature or non stick griddle to 350ºF. Pour batter onto griddle in plate size pancakes or as large as you feel you can flip over successfully. When pancakes bubble in the center they are ready to be flipped to the other side. When ready, flip pancakes and cook the other side. Delicious with butter and jam, dusted with powdered sugar, drizzled with syrup, lightly buttered and sprinkled with cinnamon sugar or topped with fruit and yogurt.

There pancakes are thinner than regular pancakes, but much thinker that crepes. They have a spongy texture that makes rolling them fairly easy if you can make the pancakes big enough. You can then stuff them with almost anything.... anyone up for Nutella and Fruit?
