2 T chopped onion
1/4 c margarine
1/4 c flour
1 t salt
1/2 t dry mustard (optional)
1.5 c milk
2 c shredded cheddar cheese
1/2 lb ham (cut into 1/8 inch slices)
6 c cooked potato slices

Directions:
Directions:
Preheat oven to 350º
Saute onion in margarine. Blend in flour and seasonings. Gradually add milk and cook, stirring constantly until thick.
Add 1.5 c cheese. Stir until melted.
Toss potatoes in cheese sauce. Pour into 2 qt casserole, reserving 1 c potato slices.
Arrange ham and remaining potato slices on top of casserole.
Bake 350º 30 minutes. Top with remaining cheese.

This is a family favorite! Also a recipe from Barb Baird, given to me at the wedding shower. Chris loved these potatoes. They taste great as a leftover too!
