6 medium Potatoes (diced)
6-7 slices Bacon (chopped)
2 large Carrots (diced)
1 large Onion (chopped)
6 stalks Celery (diced)
1 Green Pepper (seeded and diced)
½ stick of Butter
3 cups Milk or Cream
1 cup shredded Cheese
Salt and Pepper to taste
2 heaping Tbsp. White Flour

Directions:
Directions:
Fry up bacon until crisp. Remove Bacon from pan
Boil potatoes until firmly tender
Drain potatoes and reserve water
Sauté onions, carrots, green pepper, celery in reserved bacon grease until tender
Once sautéed, remove vegetables from grease and reserve grease again
Add butter to grease heat until melted
Add flour to make smooth Roux.
Bring reserved potato water to boil
Add roux a little at a time to potato water to thicken
When thick add milk or cream to make a creamy mixture
Add remaining ingredients and warm slowly so soup does not burn
Season to taste
