1 1/4 c. boiling water
1 c. quick oatmeal
1 1/2 c. flour
1 teas. baking soda
1 teas. salt
1/2 teas. baking powder
1/2 c. margarine or butter
1 c. sugar
1 c. brown sugar
2 eggs
1 teas. cinnamon

TOPPING:
1 1/3 c. flaked coconut
1/4 c. melted margarine
1/4 c. heavy cream
1 teas. vanilla
1/2 c. brown sugar

Directions:
Directions:
Pour boiling water over oats, let stand 20 minutes, do not drain. Cream margarine gradually adding sugars. Add eggs one at a time and beating until light and fluffy. Stir in oats then add flour, soda, salt, cinnamon and baking powder. Blend thoroughly. Pour into a greased and floured 9 x 13 pan, bake for 40 minutes at 350º. Cool 10 minutes then add coconut topping over top. TOPPING: Combine these ingredients and bring to a boil. Pour over cooled cake and broil until topping bubbles and browns.
