Potatoes 5-6 medium -sliced/diced
3 small cans of chicken broth
carrots - shredded - 2 cups
celery - 5 stalks - diced
onion - small chopped - 1/2 cup
green pepper - diced - 1 cup
flour - 2 tbsp.
half and half - quart
Italian sausage 1-2 lbs. browned (Johnsonville)
kale 1 cup diced (optional)
Shredded cheese or Velveeta - 2 cups
Butter - 1/2 cup
Beer- 1 can
Seasoning: salt, pepper, garlic salt, parsley, nutmeg.

Directions:
Brown sausage in Dutch Oven and add veggies and butter. Sprinkle flour on mixture to make a rue. Add broth and diced potatoes. Let simmer for 20 minutes or until potatoes are cooked. Put in seasoning to taste. Add half and half and cheese and continue to simmer for 30 minutes. (optional 1/2 can of beer) Put in kale 5 minutes before serving. Garnish with croutons and shredded cheese.
