8-10 medium Idaho or russet potatoes
8 oz. nonfat sour cream
8 oz. low fat cream cheese
1/2 cup butter,melted
1/4 cup minced fresh chives
1/8 tsp. garlic powder
2 tsp. salt
paprika

Directions:
Directions:
Peel potatoes, then cut into large chunks. Cook potatoes in boiling water until tender; drain water from the potatoes. Put potatoes through a ricer & set aside.
Put the cream cheese in a large bowl & beat until smooth. Mix the potatoes & remaining ingredients (except paprika) into the cream cheese. Mix well. Spoon mixture into a 2 qt. well-greased casserole dish. Sprinkle with paprika. Cover & refrigerate overnight. Remove from the refrigerator & let set at room temperature for 15 minutes. Uncover & bake at 350º for 30 minutes until hot.
