1 c canned milk
1 c water
4 egg yolks
4 egg whites
1 c sugar
2 envelopes gelatin
1/2 c cold water.
1 c sugar
2 c grated pineapple
1 envelope gelatin
1/4 cup water
1 tsp lemon extract
30 lady fingers
sponge cake or Angel food cake
whipped cream (optional)
Cherries (optional)

Directions:
Directions:
Mix milk and water in double boiler. Add egg yolks beaten with sugar. Cook to custard. Add gelatin softened in cold water. Add stiffly beaten egg whites.
In saucepan add sugar and grated pineapple and bring to a boil. Add gelatin softened in water. Stir. Chill both mixtures till almost set. Combine. dd lemon extract. Place lady fingers around the bottom of spring form. Fill with layers of cake and layers of mix. Set in refrigerator for 24 hours. Cover with whipped cream when ready to serve; decorate with cherries or other.
