1 lb. bag dry pinto beans
large sweet onion, such as Walla Walla or Texas 1015), chopped
fresh jalapeno, seeded, veins removed, & sliced (wear gloves & try notto get jalapeno on your hands)
1-2 cloves garlic, crushed
salt pork, or a piece of ham

Directions:
Directions:
Rinse beans under cold water. Remove any old beans or debris. Put beans in a deep cooking pot. Cover with fresh, cold water. Add remaining ingredients. Bring beans to a boil, then reduce heat to a simmer, & cook until beans are tender. Salt & pepper, to taste.
