1 peck green tomatoes - chopped fine
1 cup salt
6 large green pepper
6 large onions
6 or 8 stalks of celery
2 tsp ground mustard
2 tsp cinnamon
2 tsp cloves
1/2 tsp mace
2 pounds brown sugar
vinegar to cover

Directions:
Directions:
Chop tomatoes, cover with large cup full of salt and let stand over night then drain through sieve. Chop peppers, onions, and celery together. Add the spices, brown sugar, and vinegar to cover. Simmer for two hours
