Ham slices, we use Hormel Honey Ham because it is already shaped into the perfect muffin tin liner.

Preheat oven to 400ºF. Lightly spray or brush cooking oil holes of a standard muffin tin for as many ham n' egg cups that you would like to make. This prevents the ham and any spilled egg from sticking.
Arrange a slice of ham in each muffin tin. Carefully trim with kitchen shears the ham to make all sides even, optional. Make sure the edges of the ham are slightly above the edge of the tin.
Crack one single medium egg into each muffin tin that has been lined with ham. Salt and pepper to taste. Bake in the oven for 10-12 min. or until the egg has set.
Using oven mitts, emote the tray from the oven and leave it to cool for a few minutes. Then carefully lift out the ham n' egg cups with a small spatula. Enjoy!

These work well for brunch as well as ham n' quiche cups. Instead of a pastry crust you use the ham. Quiche freezes well so try making these for not only breakfast but also for holidays or showers or after school snacks.
