2 lb round steak, cut in 3/4 inch slices
3 T flour
1 1/2 t salt
1/4 t pepper
1/4 C shortening
1/2 C chopped onions
1/2 C chopped carrots
1/2 C chopped celery
1/2 C green pepper
1 lb can tomatoes - drained
1 C beef broth
1/4 c catsup

Directions:
Directions:
Preheat oven to 300º. Trim steak, slash edges to prevent curling. Rub in flour, salt & pepper. Heat shortening in heavy skillet; brown steak quickly on one side. Turn steak; add onions, carrots, celery and green pepper. Cook over high heat for 2 minutes. Top with tomatoes, catsup and broth. Cover; bake in preheated oven to 2 hours or until tender. Add flour to 1/4 to 1/2 c broth. Add to skillet to thicken gravy. Serve over potatoes or noodles.
