Rice uncooked (brown preferred) 2#
salt 2 T
chicken fat 3/4 #
onion- chopped fine 2 oz
milk 1qt
chicken stock 2 qts
pimentos sliced 2 large tins
almonds- bleached- cut lengthwise 6 oz
chicken- approximate. one 6#- cooked and diced- about 2#
flour 2/3 cup

Directions:
Directions:
Cook rice in 1 gal water. Saute onion in fat. When slightly browned, add flour and milk. Stir well till well cooked. Add cubed chicken and all ingredients. Flavor with accent. Put in buttered dish, cover with buttered bread crumbs. Bake about 30 min at 350º or until browned. Make 4-5 quarts.
