Chicken and Gnocchi Soup Recipe

2 (26 oz) cans Swanson Chicken broth
2 garlic cloves
3 T butter
1 T oil if desired
2 Carrots, shredded
1 Celery stalk, chopped
1/4 - 1/2 C onions diced
2 C Gnocchi
2 Cans fat free evaporated milk
1/2 pkg frozen spinach, drained
4 chicken tenderloins, cooked and shredded
Shredded Parmesan for topping
Salt & pepper
1/2 t thyme
1/2 t dried parsley

Directions:
Directions:
In frying pan sauté the onion, garlic and celery in the oil & butter. Heat chicken stock and add garlic, onion, celery and butter. Simmer 2 - 3 minutes. Add carrots and simmer until tender, 3 - 5 minutes. Bring to full boil, stir in gnocchi and cook al dente, about 3 minutes. Stir in and do not boil chicken, evaporated milk, and spinach. Season with salt and pepper and other spices. Allow to simmer 2 minutes. Ladle soup into bowls and add freshly grated Parmesan Cheese
