4 Bacon Slices
1/2 C sliced onion
1/2 C celery
1/2 C Green pepper
1 C shredded mozzarella cheese or 1 C Mexican blend cheese
3 C diced Zucchini
2 C Fresh peeled tomatoes, chopped
salt & pepper
1/2 t oregano
1/8 t thyme
Directions:
Directions:
Fry bacon, drain, sauté onions, celery and green pepper in bacon grease. Add zucchini, tomatoes and seasonings. Cook on low 25 min with lid on. Sprinkle with cheese and let melt. Garnish with bacon.
