1 tablespoon yeast
¼ cup boiling water cooled
1 cup milk
1½ tablespoons sugar
1 tablespoon butter
½ teaspoon salt
2 to 2½ cups flour

Directions:
Directions:
Soften yeast and sugar in water 98º. Scald milk. Place butter and salt in bowl. Add milk. Cool. Add soft yeast to milk mixture. Add sufficient flour to make soft dough. Beat well using wooden spoon. Cover with damp cloth and leave to rise in warm place until light and foamy.

Add more flour to make soft dough. Knead. Leave in warm place til doubled. Grease top with butter. Punch down and leave to rest 5 minutes.

Shape and place in lightly greased tin. Cover and leave to rise until doubled. Bake at 350° for 15 minutes. Reduce to 300° for 30 to 40 minutes til done.
