Floating Islands Recipe

4 cups milk
3/4 cup sugar
1 vanilla bean split
4 eggs separated (4 egg whites in medium mixing bowl, 4 egg yolks in another medium mixing bowl both at room temperature
1 pinch of salt
10 T sugar
1 cup sugar for caramel sauce

Stirring constantly bring 4 cups milk, 3/4 cup sugar and vanilla bean to a boil in a large boiler. Turn off heat and let sit covered for 15 minutes. While this sets beat the 4 egg whites with the 1 pinch of salt adding the 10 T sugar very slowly one tablespoon at the time while you until stiff peaks form. This can take around 10 minutes. Drop the stiff egg whites from a tablespoon into the heated milk mixture which is simmering on low heat. Poach the islands for 2 minutes on each side. Spoon out and place on a cookie sheet lined with a paper towel.
Custard
Strain milk and very slowly add to the egg yolks beating with a whisk. Place mixture in a clean boiler and heat on low heat stirring constantly until mixture thickens and coats the back of a metal spoon around 15-20 minutes. If wanting more vanilla (or if you do not have vanilla bean) at this point add 1 teaspoon vanilla extract. Pour mixture and cool.
Caramel Sauce
Melt the 1 cup sugar in a 10 " cast iron skillet on medium heat stirring constantly with a wooden spoon until golden brown.
Assemble
Place chilled custard in bowl, add floating island and drizzle caramel sauce over the top. Can garnish with sliced strawberries and blueberries.
