3 T butter
1 medium onion chopped
5 cloves of garlic chopped
4 cups chicken stock
1 Butternut Squash, peeled and cut into 2 " pieces ( I get already peeled & cut in the store)
1 T curry powder
1 t ground cumin
1/4 t cayenne pepper
salt to taste
1/2 cup half-and-half

Directions:
Directions:
Melt butter and saute onions and garlic until soft. Add chicken stock, squash, curry powder,cumin, cayenne pepper and salt. Bring to a boil, reduce heat to simmer and cook until squash is tender around 15 minutes. Strain out the vegetables and a little stock, puree in large blender. Add puree back to remaining stock and add the cream. Serve immediately.
