1 Pound Dried Red Beans
2 Envelopes Dried Onion Soup Mix
1/4 Teaspoon Chili Powder
As Needed, Mayonnaise

Directions:
Directions:
Cook the RED BEANS in a pot of unseasoned Water, until they are tender enough to mash with a fork.

When the BEANS are tender, remove from the heat and drain, saving the Water for later.

Place the BEANS into a bowl large enough to accommodate them, leaving extra room. Mash the BEANS thoroughly while they are still hot. Add in the SOUP MIX and CHILI and blend together really well.

Now, add in just enough MAYONNAISE to get the consistency you like to be used for a SPREAD. If you want to use this as a DIP, then add in some of the BEAN Water reserved from the Cooking Process. Add enough and stir well until you reach the consistency you want for a DIP.

Serve with Corn Chips and such. Do Not add Salt, as the SOUP MIX is Salty enough.

This is Mom's recipe for Red Bean Dip or Spread. The Spread is what you get first, because it will be thicker. The Dip is what you get when you thin it down a bit more. Do Not be afraid to add more Chili Powder or even Cayenne Pepper to this to suit your preference. Can also top with Chopped Tomatoes and/or Cilantro.
