1/2 C. milk
1/2 C. water
1/4 C. baking powder
1/2 - 1 tsp. sugar
1/2 tsp. lemon pepper
1/2 tsp. salt (opt.)
1 tsp. fish seasoning (opt.)

an "extra" small amount of flour for coating fish BEFORE dipping in batter.

Heat your skillet to about 350º with enough Canola oil to allow a shallow layer in pan; enough to cover the bottom of your pan completely. (I use a fry pan instead of a deep fryer so you will have to turn your fish once.)
Whisk together all ingredients except for the small amt. of flour which you put on a plate to roll your fish pieces in.
Coat your fish with the flour and then completely cover the fish pieces with batter. Put your batter covered fish in the fry pan in a single layer and try to keep them from touching at least until the batter is set.
When finished frying, put the fish on paper towels to soak up any extra oil. If you need to keep the fish warm and crispy for a short time, put on a rack in the oven and turn the temp. to warm. Don't cover with foil as that will make the fish soft and not crunchy.
Prep: 10 Minutes
Enough coating for about 2 pounds of fish.
