1.5 c. 375 mL Flour
1 tsp. 5 mL Salt
1 T 15 mL Sugar
2 tsp 10 mL Baking Powder

1 - 1.5 C. 250 - 375 mL Milk
2 T. 30 mL Melted Margarine or oil
2 eggs

1. Stir dry ingredients together in medium bowl
2. Measure milk into measuring cup,
3. Add eggs and margarine or oil and stir well
4. Pour into dry ingredients all at once
5. Mix with fork until all flour is moistened. Batter will be lumpy
6. Preheat griddle to 350* F. OR heat frying pan over medium high heat until a drop of water put in pan bounces around before evaporating
7. Pour batter onto hot cooking surface .
8. Cook until top is covered with fine bubbles and some start to burst.
9. Turn over and cook until bottom is as brown as top.
10. Serve hot with syrup and butter or margarine

A thick batter will make thick pancakes that take a long time to cook. A water batter will make thin crepe-like pancakes. Adjust thickness by adding milk or pancake mix.
