1/3 C balsamic vinegar
1 1/2 T chopped fresh thyme
1 1/2 T Chopped fresh marjoram
1 1/2 T Dijon mustard
2 Cloves garlic, minced
salt & pepper
3/4 C extra-virgin olive oil
1 Flank steak 1 1/2 lbs
1 red onion cut into wedges
1 head romaine lettuce torn
2 -3 tomatoes, cut into wedges,
plus handful of mixed cherry tomatoes, halved
Directions:
Directions:
Whisk together vinegar, thyme, marjoram, mustard, garlic and 3/4 t salt and 2 t pepper. Whisk in oil until blended.
Place steak in shallow dish. Pour half of vinaigrette over steak; turn to coat both sides. Cover and refrigerate 4 to 24 hours, turning occasionally. Cover remaining vinaigrette; refrigerate. Remove steak from refrigerator 30 min before grilling.
Prepare grill for direct heat cooking over high heat. Remove steak from marinade; discard marinade. Grill steak turning once 5 - 6 minutes per side for medium rare. Let rest 5 to 10 min.
Meanwhile place onion wedges on grill; cook until softened and grill marked about 5 minutes. Thinly slice steak across grain, reserving any accumulated juices. Toss lettuce with reserved vinaigrette; divide among individual plates. Top with steak, onion and tomatoes. Drizzle with meat juices.
