For Dough
2 packages of fast rising yeast or 4 1/2 teaspoons of yeast from jar.
1/4 cup sugar
1 tablespoon salt
1 1/2 cups milk
1/2 cup water
1/2 cup margarine or butter
7 1/2 cups flour
3 eggs at room temperature

For Poppy Seed Mixture
1 cup poppy seed, ground in coffee grinder
1 tablespoon sugar
1 egg
Milk, tiny bit

For Dough
1) In a large beater bowl add the 2 packages of yeast, 1/4 cup of sugar and 1 tablespoon of salt. Add a cup of flour.
2) In a small pan add the 1 1/2 cups of milk, 1/2 cup of water and 1/2 cup of butter. Heat to scald milk and then cool it before adding to the flour mixture.
3) Add the cooled scalded milk to the flour mixture and add another cup of flour. Mix well.
4) Add the 3 eggs and mix. Add more flour while mixing to about total of 7 1/2 cups flour. Mix until the dough is smooth and elastic.
5) Knead it several times in mixer or by hand. Grease a large bowl with oil and add the dough. Let it rise in a warm place until it doubles.

Poppy Seed Mixture
Grind about 1 cup of poppy seed in a coffee grinder. (You don't have to grind it but the seeds will stick in your teeth.) Put in a small pan and add a tablespoon of sugar, 1 egg and a tiny bit of milk. Put pan on low heat and stir until it thickens. Cool the mixture. (Freeze if you have any leftover and add to the next mixture).

For the Poppy Seed Doughnuts
1)After the dough rises, roll out a small amount of dough to about 1/4 inch thickness, cut with a biscuit cutter. Add about a teaspoon of the cooled poppy seed mixture. Fold the dough over in half and pinch the ends. Fry the doughnuts in vegetable oil until cooked or lightly browned.

Irene suggests if you use the dough to make biscuits or bread (2 loaves) you do half the recipe for the first try.
