8 chicken bottom capons skin on

1 large onion, diced
3 stalks celery, chopped
1 box mushrooms, sliced (vary the type of mushrooms used)

1 small egg challah or 3 bilkelach
egg
salt and pepper

3 cloves fresh garlic
paprika
2 T. oil

1 lg. spoonful of apricot jam

Directions:
Directions:
Saute onions, celery and mushrooms.
Soak challah in water. Remove crust and squeeze water out of challah well. Chop challah with saute mixture. Add 1 egg and salt and pepper and mix well.

Place 2 large spoonfuls of stuffing on each capon and roll up. Place seam side down in pan.

Mix:garlic, paprika and oil and spread on top of rolled up capon.
Cover and bake for 1 1/2 hrs. on 350º.
Uncover and spread apricot jam on top of each capon. Bake uncovered an additional 30 minutes.
