2 cups canned diced tomatoes
1/4 small red onion
1/4 small white onion
1 scallion
1/8 tsp cumin
1/2 fresh jalapeņo
1/2 tsp salt
1 tsp lime juice
1/2 tsp white vinegar
1 clove garlic
1 tbls fresh cilantro

Directions:

Put all ingredients in food processor and blend together quickly (don't puree smooth!) Refrigerate for at least 2 hours before serving to let the flavors meld together.

This is an awesome quick salsa without having to chop fresh tomatoes (which I always prefer!!) Eldorado is one of my all time favorite restaurants in Madison Wisconsin and this is the house salsa they serve. It's great for a large group or as a sauce for eggs, etc.
