2 lb. jalapeno peppers
5 onions, julienned
8 carrots, sliced
1 tsp. thyme
3 bay leaves
2 tsp. salt
2 cups vinegar
oil

Directions:
Directions:
Pour boiling water on peppers to soften them. Saute carrots and onions lightly in a little oil. They should still be crisp. Add to drained peppers. Put seasonings with a little oil. Add vinegar. Mix all together. Put in jars. Fill with water. Process 5 minutes for pints.
