6 boneless chicken breasts
6 slices of thin ham (Buddig dried ham works well 12 slices)
6 thin slices mozzarella cheese
2 eggs
3 Tbsp butter
bread crumbs
wooden toothpicks

Sauce:
1 can cream of celery, chicken or mushroom soup
1/2 c mayonnaise
milk
1/4 tsp lemon juice
parsley flakes

Directions:
Directions:
400º 10 minutes 350º 40-50 minutes

Flatten chicken breasts, pepper.
Place 1 slice ham over breast, top with cheese. Roll from short end and secure with toothpick.
Melt 3 Tbsp butter in a 9X13 baking dish.
Slightly beat two eggs.
Roll breasts in egg then in bread crumbs.
Place in baking dish, rolling in butter to coat. Drizzle with more butter, if needed.
Bake at 400º for 10 minutes, reduce heat to 350º and bake for an additional 40-50 minutes. Add sauce to chicken during the last 15 minutes of baking.
Sauce:
Heat 1 can of cream soup with 1/2 c mayonnaise. Add 1/4 tsp lemon juice and thin with milk as needed. Add parsley flakes.

Alternate sauce: Cream of chicken soup with 1/4 c dry white wine.
