4 C. Onions Chopped
2 C. Bell Peppers (gold, yellow, red) Chopped
2 C. Celery Chopped
3 lbs. Okra
1 Lg & 1 Sm can Tomatoes
3 lbs Andouille Sausage
3-4 1/2 lbs Shrimp
4 - 6 lbs Chicken - Boil, remove skin - put bones and skin back in pot, simmer. Strain and use this for Chicken broth.
3 TBS Garlic
4 TBS Worchester Sauce
4 Bay Leaves
4 TBS Salt
2 tsp Louisiana Hot Sauce
1-2 tsp Black Pepper
12 C chicken Broth

Rue: Tony Chacheres instant rue simmer untim dark brown or do your own, 1/2 flour & 1/2 oil stir until brown.

Directions:
Cook Celery, Onions & Bell peppers in rue until tender.
Add this to Chicken Broth with Sausage, Chicken and all the spices.
Simmer several hours for the melding of all the flavors.
When all celery, onions and peppers are soft add okra. Simmer until okra is soft. Then add shrimp. Cook until the shrimp turn pink. Turn off.

Serve with rice.
