3/4 LB 450 g Beef steak, cut into strips
pinch Salt
1/2 tsp 2.5 mL Sugar
1/2 tsp 2.5 mL Freshly ground Pepper
1 Tsp 5 mL Light Soya Sauce
1 Tsp 5 mL Dark Soya Sauce
1 Tsp 5 mL Chinese wine or Mirin
2 T 30 mL Cornstarch
3 T 50 mL Oil
2 " 5 cm Fresh ginger chunk, peeled and cut into thin slivers
1 Jalapeno pepper julienned
1 Clove Garlic, thinly sliced
3 Green Onions, cut into 3" sections
1 underripe Mangos, sliced
3 T 90 mL Dark Soya Sauce
1 cup 250 mL Carrots, sliced diagonal
1/2 Red Pepper, cut into strips like mango
1/2 cup 125 mL Chicken Stock
1/4 cup 60 mL Oyster Sauce

Directions:
Directions:
Marinate beef in Salt, sugar, pepper, soya sauces, wine and cornstarch
Preheat Wok and add oil
Stir fry ginger and jalapenos for 30 sec.
Add garlic and white part of green onions
Add beef in single layer, place mango slices on top
Allow to sit without stirring for 1 minute
Stir fry til meat is medium rare
Stir in soya sauce and carrots and peppers
Stir in oyster sauce and serve,
