3 # 1.5 Kg Beef roast, cubed
6 medium Onion, sliced
1 cup 250 mL Beer
1/2 cup 125 mL Beef Stock
1/2 tsp 2.5 mL Salt
1/4 tsp 1.25 mL Pepper
1/2 tsp 2.5 mL Flour
1 tsp 5 mL Sugar
2 T 30 mL Butter
1 T 15 mL Flour
1/2 cup 125 mL Beef Stock

Directions:
Directions:
1. In heavy saucepan, heat butter
2. Fry meat in batches until well-browned. Remove from pan and keep until later.
3. Fry onions in drippings until slightly brown
4. Stir in sugar and flour to make dark roux. Stir in stock and stock.
5. Add meat back to pan.
6. Bring to a boil and reduce heat, simmering for at least 3 hours
