Personal Notes:
Personal Notes:
Hardin/Scott Family History: Grandmothers and Great Grandmothers always used their own freshly canned green beans from their garden, used country ham or ham hock as seasoning and added a couple of peeled and quartered white potatoes to the green beans while cooking. They did not use Dales Sauce. The ham hock flavored the beans. (Some added a couple tablespoons of sugar. I have been adding brown sugar). My grandmothers green beans were always the best and I have never been able to duplicate them. I sometimes wonder if it was the actual methods of preparing and canning their fresh green beans that really did make a difference!
