10-ounce box frozen chopped spinach, thawed
6.5 ounces artichoke hearts, rinsed and chopped
Olive Oil
1 tablespoon diced onion
1 tablespoon diced red bell pepper
2 cloves garlic, minced
4 ounces cream cheese, softened
1/2 cup shredded Parmesan cheese
1/4 cup shredded Romano cheese
1/3 cup heavy cream
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 dashes hot sauce (optional)

Garnish:
diced tomato
shredded Parmesan cheese
minced parsley

Directions:
Directions:
Soften cream cheese at room temperature for 15 minutes.

Saute onion and red bell peppers in small amount of olive oil until onion is almost translucent. Add garlic and saute about 30 seconds, stirring constantly. Remove from heat and set aside.Remove spinach from box; thaw under cold running water. When spinach is thawed, wrap in towel and squeeze dry.

In a saucepan, place heavy cream, salt, and pepper. Add sauted onions, peppers and garlic and heat over very low heat.Cut cream cheese in cubes. Add to saucepan . Whip smooth. Add Parmesan and romano cheese and whip smooth.

Chop artichokes and place in a microwave bowl. Microwave on high until warm, drain and add to saucepan. Add hot sauce, if using. Stir to incorporate. Heat mixture in saucepan until hot.

Place mixture in serving bowl and garnish with shredded parmesan cheese and diced tomatoes. Sprinkle with minced parsley.

Serve with fresh vegetables or chips.
If not using right away refrigerate for later.
