1 lb. sliced bacon, diced
1 sweet onion, chopped
4 C frozen Shredded has brown potatoes, thawed
12 eggs, lightly beaten
2 C shredded Cheddar Cheese
2 C cottage cheese
1 1/4 C shredded Swiss Cheese

Directions:

Preheat oven 350 degrees F. Grease 9 x 13 pan. (see note)

Fry bacon and onion for about 10 minutes. Drain. Transfer to large bowl. Add rest of ingredients.

Bake 50-60 minutes until set. Let stand 10 minutes before serving.

I use a turkey roaster for this recipe. Works great and don't have to worry about boiling over.
