1 c. cooked brown rice

1 c. creamy peanut butter

1 medium onion, finely chopped

1/2 c. minced celery

6 saltine type crackers

2 eggs

1 can condensed tomato soup, undiluted

2 tbsp. oil

1/2 tsp. sage

salt and pepper, to taste.

Directions:

Mix well, by hand, all the ingredients in a bowl.

Placed in a greased 8 inch square pan.

Bake at 350º for 45 minutes, or until firm to the touch.

Cool slightly and carefully cut out square pieces to serve. This recipe will firm up more when cold and may be reheated.

The recipe is nice topped with vegetarian brown gravy and mashed potatoes on the side..
