1 large head Cauliflower
(1) 4 oz. can sliced mushrooms, drained/ or 1/2 c. fresh mushrooms, sliced
1/2 cup green pepper diced
1/4 c. butter or margarine
1/3 c. flour
2 c. milk
1 tsp. salt
1 c. Swiss cheese, grated
1/3 c. Cheddar cheese, grated
2 tbsp. chopped pimento (2 oz. jar)

Break cauliflower into medium size florets. Cook in boiling water until crisp and tender. Drain and set aside.

In a 2 qt. sausepan, saute mushrooms and green pepper in butter until tender, about 5 minutes.

Blend in flour, add milk and cook 5 to 10 minutes, stirring until sauce has thickened.

Add salt, cheese and pimento, mix well.

Place half of cauliflower in a large buttered casserole. Cover with half of the sauce. Repeat with layers.

Bake uncovered at 325 degrees for 15 minutes.
