2 cups flour
1 tablespoon sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon baking powder
2 eggs, separated
2 and 1/2 to 3 cups buttermilk

Directions:
Directions:
Preheat pancake griddle to 350º. Mix flour, sugar, baking soda, salt and baking powder in a large mixing bowl and set aside. Separate eggs into two mixing bowls and beat eggs whites until stiff. Beat egg yolks in separate bowl. Add buttermilk to yolks and beat to combine. Stir buttermilk mixture into dry ingredients. Fold in egg whites. Cook on preheated griddle, turning once, until each side is golden brown.
