1 lb Flour
1 tsp Baking Powder
Pinch of Salt
4 oz Lard (Shortening)
6 oz Sugar
4 oz Butter
4 oz Currants
1/2 tsp Cinnamon
1 Egg
2 tbsp Milk

Directions:
Directions:
Sift flour, baking powder and salt together.
Rub in the lard (shortening) and add other dry ingredients.
Beat egg lightly and add enough milk to make a firm dough.
Roll out on a floured board to 1/4" thickness and cut into rounds.
Cook on greased griddle or non-stick frying pan for about 3 minutes on each side until golden brown.
Sprinkle with sugar and leave to cool.
Serve alone or with butter.
