1 cup graham cracker crumbs (or crushed gluten-free sweet crackers)
1/4 c powered sugar
1/4 c melted butter
One 3 ounce Lemon Jello package
1 c hot water
Two 8 ounce cream cheese
1/2 c sugar
1 tea. vanilla
1 cup heavy cream

Directions:

Mix crumbs, powered sugar and melted butter together. Press into the bottom of a 9 inch springform pan - reserving a couple of teaspoons of crumbs for the topping.
Dissolve jello in the hot water. Chill the jello until just getting a bit thick.
Beat cheese, sugar and vanilla until fluffy.
Beat in the thickened jello.
Whip the cream until nice and thick.
Fold the whipped cream into the cheese mixture.
Pour into prepared pan. Sprinkle with reserved crumbs.
Cover and chill.
