6 Baking Potatoes
1/2 cup Butter - softened
1 cup Shredded Cheese
1 cup Light Cream (1/2 & 1/2 cream) - hot
1/2 tsp Onion Salt
1/4 tsp Garlic Salt
1/2 tsp Salt
1/2 tsp Ground Black Pepper
1/2 tsp Dad's Meat Rub (optional)
6 - Cheese - cut into slices

Sour Cream
Green Onions - chopped

Directions:

Preheat oven to 400º F.
For crunchier skins - do not wrap potato in foil - scrub and leave "as is".
Bake in oven for 45 - 60 minutes until tender when poked with a sharp paring knife.
Cut in 1/2 lengthwise.
Scoop out pulp into a bowl - be careful not to break skins.
Add butter, shredded cheese, cream, salts and pepper.
Mash together.
Stir in green onion (or save to top potato when serving).
Stuff shells - then, put a small cut piece of cheese (length of potato) in the centre of each potato.
Arrange on baking sheet.
Reduce heat of oven - 350º F and bake until hot.
Broil until nicely browned. Couple of minutes - watch closely.
Serve hot with sour cream, bacon bits and green onion.
