1 lb hot sausage
1 lg onion
1 lb crawfish tails
2 Tbsp parsley, chopped fine
1 tsp green onion, chopped fine
1 tsp hot sauce
1 tsp salt
1 tsp pepper
1/2 c bisquick
3/4 c milk
1 egg
1/2 c mayonnaise
1/4 c Parmesan cheese
1/4 c Cheddar cheese
1/4 c Swiss Cheese

400º 20-30 minutes

Brown sausage in skillet.
Add onion and crawfish, cook 10 minutes on low heat.
Add parsley, green onion, hot sauce, salt, pepper. Mix well.
Remove from heat and let cool.
Make batter of Bisquick, milk, egg and mayonnaise.
Place cheese in food processor and grate fine.

1/2 Bisquick mixture
Crawfish mixture
Cheese
Remaining Bisquick

An old favorite camp breakfast from my days in Louisiana. I was introduced to this delicacy by my late friend Richard Evans while on a church campout. It soon became a "go to" dish for all of our gatherings, camp related or not.
