10 ounces butter
10 ounces sugar
8 eggs
16 ounces flour
5 pounds fruit (1 pound currants, 2 pounds sultanas, 1 pound raisins, ½ pound candied cherries, ½ pound candied peel)
2 tablespoons golden syrup
2 tablespoons sherry
½ teaspoon soda mixed in 1 teaspoon vinegar
1 teaspoon lemon essence
1 teaspoon vanilla essence
1 teaspoon almond essence
½ teaspoon nutmeg
¼ teaspoon cloves
1 teaspoon allspice

Cream butter, sugar, golden syrup and essences. Add lightly beaten eggs slowly while creaming. Have all ingredients measured and ready before starting to mix. Mix all fruits together separating thoroughly. Add flour, spices, and sherry slowly while creaming. Add soda and vinegar mixture. Mixture may look curdled before adding flour and fruit. Fold in for about 5 minutes to mix everything thoroughly.

Line 8 inch square tin with 4 to 6 layers of brown paper (each layer must be greased with margarine). Then add layer of greased parchment paper. Cover top of tin with brown paper with a 4 inch hole cut in middle. Bake 5 hours at 250°. Take cover off and bake for an additional two hours. When finished baking, poke with skewers and pour brandy over top.

Hayden's mom and dad's wedding cake. This makes much more than one 8 inch tin. There is enough for a large 13 x 9 inch tin, or more. It was finished baking in less than the initial five hours. I would suggest trying in two or three smaller tins and baking for less time.
