2 large fennel bulbs, trim off stalks and quarter bulbs lengthwise (reserve fronds)
2 tablespoons butter
1/2 cup chopped onions
5 ounces matchstix carrots
1 cup chicken broth

Directions:
Directions:
Bring salted water to a boil in a large saucepan. Add fennel and blanch for 5 minutes. Drain.

Heat butter in a large nonstick skillet on medium. Add fennel and brown lightly on all sides for about 5 minutes.

Add onions and carrots. Cook for 3 minutes until slightly softened.

Add broth. Season with fresh ground pepper.

Simmer covered for 15 minutes until vegetables are tender. If there is still liquid in the skillet, raise the heat to high and boil uncovered until it reduces to a glaze. Sprinkle with 2 tablespoons chopped fennel fronds.
